Thanksgiving is upon us and what better way to get into the festive season than enjoying some homemade food? We asked our nurses for their special Thanksgiving recipes and wanted to share a scrumptious one from Karen called ‘Brownie cupcakes’. We hope you enjoy it as much as we did!
Brownie cupcakes
Total time: 45 minutes
Ingredients
24 Thanksgiving pattern cupcake liners (placed in a muffin tin)
4-6 oz Milk chocolate chips
2 sticks Butter
1 3/4 cups Sugar
4 Eggs (slightly beaten, room temperature)
1 cup Flour
1 tsp Vanilla essence
1-3 cups Pecan nuts (chopped)
Process
Preheat the oven to 350o F.
Melt the butter and chocolate chips in a saucepan on low heat
Add the sugar and slightly beaten eggs.
Add the flour until the mixture is combined well
Add the vanilla essence and pecan nuts.
Pour the batter into cupcake liners (fill them 1/2 - 3/4 full).
Bake for 20 minutes or until a toothpick comes out clean!
